Currently have 2, 7950's in crossfire mode, and was thinking of getting a GTX 980, but would a single one of them give me a noticeable improvement in fps

If you can hold off 6 to 9 months there should be a truly next gen array of cards available. I was holding out for the 3xx series from AMD but they don't seem that much quicker than the fastest Nvidia card, and for me (7970 overclocked) they don't offer that much of a jump on a single monitor.
Not sure on the specs of the 7950, but have you considered overclocking it?
Actually looking at benchmarks the 7950 is probably lagging behind a bit by now. I'd get something basic and cheap to tide you over until next year.

My gtx 780 can haul along triples at 5760 x 1980, pretty high settings, quite nicely, so a gtx 980 should make a single monitor fly.

Yeh, just looking up some old posts and it looks like I bought the first one 2 years ago and that was 2nd hand, so it is getting a bit long in the tooth.

Well I bought one, a ZOTAC GeForce GTX 980 Ti AMP! Extreme Edition off Overclockers forum, $830 pickup and its huge, had to modify my case to fit it in.
Tried an AI race in AC with everything at max, full field ,starting at the back and it was smooth as silk.
Same with rF2, so happy
